Oat Almond Biscuits

An easy almond biscuit recipe that's great for nibbling and dunking in tea, made with oats for added texture. Pecan nuts, pistachios or macadamias would all make a good substitute if you wanted to swap out the almonds. Leave plenty of space between the dough balls on the tray, as these biscuits will spread out while baking.


Instructions

    Preheat oven to 180°C/160°C fan/gas 3. Melt the butter together with the demerara sugar and golden syrup in a pan over a gentle heat. Remove when dissolved.

    Meanwhile, roughly chop the whole almonds.

    Sift the flour into a bowl, then add the oats and a pinch of salt. Mix in half the nuts, then pour into the butter mixture and stir to combine.

    Roll into 12 large walnut-size pieces, place on a lined baking tray and flatten slightly into rounds of about 6cm.

    Scatter the remaining nuts on top and bake for 15 mins.

    Leave them on the tray for 10 mins before transferring to a wire rack to finish cooling.

  • 75g demerara sugar
  • 1 tsp golden syrup
  • 40g whole almonds, roughly chopped
  • 110g plain flour
  • 110g oats
