Vibrant crunchy bean salad with toasted seeds

Super-fresh beans and toasty nuts for double the crunch. Dress just before serving.


Instructions

    Mix the dressing ingredients together and set aside.

    Blanch the beans for 2-3 mins in boiling, salted water. Drain and refresh in cold water, drain again and tip into a dish.

    Toast the seeds for 2-3 mins in a large pan, until fragrant and golden. Add the soy sauce and shake the pan to coat the seeds, then turn off the heat.

    Toss the dressing and seeds into the beans and serve.


Ingredients

  • 600g fresh beans, such as green beans, mangetout and sugar snap peas
  • 50g mixed seeds
  • 1 tsp soy sauce
  • 1 shallot, finely chopped, for the dressing
  • 1 tsp dijon mustard, for the dressing
  • 1 tsp honey, for the dressing
  • 1 clove garlic, crushed, for the dressing
  • 1 tbsp white wine vinegar, for the dressing
  • 3 tbsp extra virgin olive oil, for the dressing
