Saffron & Ginger Poached Pears

This poached pear recipe is rich in autumnal spices and aromas – serve as a cosy pudding alongside a dollop of mascarpone or vanilla ice cream. Make sure the pears you use are still firm to the touch before using them; any over-ripe fruit is likely to disintegrate in the heat. 


Instructions

    Heat 250ml water together with the ginger wine in a medium-size pan over a regular heat. Dissolve the sugar into the liquid as it warms up. Bring to a boil, turn down the heat then add the saffron, cinnamon and star anise and simmer for 5 mins.

    Place the pears in the pan, pop the lid on and poach for about 30 mins, turning the pears every so often.

    Remove the pears from the liquid and leave them to cool. Serve with ice cream or mascarpone and spoon over the remaining syrup.

  • 100ml ginger wine
  • 75g caster sugar
  • 1 saffron, generous pinch
  • 1 cinnamon stick
  • 1 star anise
  • 4 firm pears, peeled with stems intact
