Using a spiral vegetable slicer, mandoline or vegetable peeler, make ribbons of 2 medium sized courgettes.

Heat 2 tsp sundried tomato oil from a jar in a frying pan over a medium heat. Add 200g chicken breast strips and cook for 4 minutes, then add the courgetti and cook for a further 3 minutes.

Mix in 4 chopped sundried tomatoes, then remove from the heat and season to taste.

Squeeze in some fresh lemon juice and sprinkle over some fresh oregano before serving.
