Preheat oven to 200°C/180°C fan/gas 6 and place all the ingredients for the burgers (except the oil) into a large bowl.

Add some seasoning, mix together using your hands and divide the mixture into four. Shape into burgers and set aside.

Put the sweet potato wedges on a baking tray and toss with 1tbsp oil and seasoning, making sure each wedge is coated. Cook in the oven for 20 mins.

While the wedges are baking, add 2tbsp of oil to a large non-stick frying pan on a medium to low heat and cook the burgers for 5 mins on each side, until nice and golden. Remove from the pan and add them to the oven tray with the wedges to cook for 5 mins more.

Meanwhile, make the mayonnaise by mixing everything together with some seasoning.

When you’re ready to serve, place each burger onto a couple of lettuce leaves, scatter with the spring onions, add the wedges and finish with a dollop of chilli lime mayonnaise

- 500g turkey thigh mince
- 3 cm fresh ginger root, peeled and grated
- 1 clove garlic, crushed
- 1 tbsp sweet chilli sauce, plus 1tbsp for the mayo
- 25g fresh coriander, finely chopped
- 25g fresh mint, leaves finely chopped, plus extra to garnish
- 5 spring onions, finely chopped (3 for the burgers and 2 to serve)
- 2 tbsp olive oil, plus 1tbsp for the wedges
- 800g sweet potatoes, cut into thin wedges
- 4 tbsp mayonnaise, for the mayo
- 1 lime, zest and juice, for the mayo
- 1 round lettuce, broken into individual leaves, to serve
