Walnut & Rocket Pesto

Whip up this peppery and punchy seasonal pesto in under 10 minutes. Toasted walnuts are used for extra flavour – gently fry them in a dry pan for a few minutes until they become aromatic and are just starting to colour. Pair this simple sauce with gnocchi or pasta for an authentic taste of Italy.


Instructions

    In a blender, whizz together the rocket, walnuts (toasted for extra flavour), parmesan, garlic, olive oil and walnut oil until it combines to form a smooth consistency. Add water to thin as needed, and season to taste.

    Serve with gnocchi, your choice of pasta, on toast, spooned over a baked sweet potato, or transfer into an airtight container and chill until needed. This will keep for up to five days in the fridge.

  • 55g walnuts, toasted for extra flavour
  • 40g parmesan, grated
  • 1 clove garlic, chopped
  • 90ml extra virgin olive oil
  • 40ml walnut oil
  • 500g gnocchi, to serve (optional)
