  • 2 x 260–300g packets plaice fillets (4 fillets)
  • 75g freshly grated Parmigiano Reggiano
  • 75g breadcrumbs
  • 1 x 25g pack Cooks’ Ingredients curly leaf parsley, (1tbsp reserved for the tartare sauce)
  • 50g melted butter, plus some extra
  • 1 pinch salt
  • 1 heaped tablespoon fresh Delouis mayonnaise
  • ¾ tablespoon capers in vinegar, drained and patted dry
  • 3 large cornichons, drained
  • 1 pinch freshly milled black pepper
  • 4 lemon wedges plus 3/4 tbsp lemon juice
