Spring. The temperature rises, the birds return, and plants put out new shoots. Seasonal foods change too – we move from root veg to spring vegetables and fruit, such as asparagus, salad greens, and peas. We have a wonderful selection of spring recipes using seasonal ingredients and lighter flavours. Our asparagus, pea and mint risotto suits the season so well, as it combines fresh green flavours with the comforting warmth of rice (after all, spring days can still be pretty chilly). Rhubarb harvest starts (when grown in the UK) in April, and here the piquant sharpness of the vegetable cuts through the rich meat in our warm rhubarb and red cabbage salad with herb-crumbed pork chops. Who said roast chicken has to be hard work? Tom Hunt’s one-tin chipotle roast chicken and sweet potatoes is a spicy showstopper that you can even cook mid-week. Spring has sprung on your plate.
