This sticky-sweet Japanese-inspired honey ginger chicken is an all-in-one winner of a recipe. Simply add the chicken thighs, garlic, ginger and sauce ingredients to a slow cooker and cook low and slow for 3 hours. It’s delicious served with a scattering of salad onions and sesame seeds, with a side of jasmine rice to soak up the sauce.

Ingredients

  • 800g chicken thighs, skin and bones removed
  • 3 garlic cloves, crushed or grated
  • 3 cm piece of ginger, finely chopped
  • 60ml dark soy sauce
  • 2 tbsp oyster sauce
  • 60ml runny honey
  • 60ml tomato ketchup
  • 2 tsp sriracha sauce
  • 2 tsp cornflour, mixed with 2 tsp water
  • 350g jasmine rice
  • 3 salad onions, thinly sliced, to serve
  • 2 tsp toasted sesame seeds, to serve

Method

Step 1

Place the chicken, garlic, ginger, soy sauce, oyster sauce, honey, ketchup, sriracha and 150ml water into the slow cooker and stir well, then cook on high for 3 hours.

Step 2

When the chicken is tender and falling apart, shred it into the sauce with two forks and stir thoroughly. Mix in the cornflour mixture and cook again on high heat for 10-15 mins until the sauce thickens.

Step 3

Cook the jasmine rice according to the pack instructions, then serve it with the chicken, sprinkled with the salad onions and sesame seeds.

Tips or serving suggestions

To make this recipe on the hob, brown the chicken thighs (in batches if needed) in a large pan over medium heat in a little hot oil. Add the garlic and ginger and fry for another 2 mins, then add the sauce ingredients and 150ml water and simmer, covered, for 1 hour over low heat. Add the cornflour mixture, turn the heat up to high and boil for 1 min until the sauce thickens. Shred the chicken into the sauce and serve it with jasmine rice, scattered with salad onions and sesame seeds.
