Brown Sugar Meringues

Brown sugar adds a lovely caramel flavour to the meringues.

Good with whipped double cream as a filling and drizzled with melted dark chocolate.

Prepare Ahead

You can make the meringues up to a week in advance and store it in a dry, airtight tin.


Instructions

    Preheat the oven to 130°C (250°F/Gas 1/2). Whisk the egg whites until stiff in a clean bowl. Whisk in the sugar, 2 tbsp at a time.

    Line 2 baking trays with greaseproof paper. Using a dessert spoon, place spoonfuls of the meringue mixture on to the trays. Bake for 1 hour, or until crisp on the outside and slightly chewy inside.
