Chocolate Rice Pudding

Also known as Arroz Doce, this is a traditional Portuguese dessert.

    Bring 2 litres(31/2 pints) water to the boil in a large saucepan. Add the rice and salt, bring back to the boil, reduce the heat, cover, and cook for 10 minutes, then drain.

    Pour the milk into a saucepan and add the cocoa. Bring to the boil, then add the rice. Reduce the heat and cook, uncovered, for 30 minutes, or until the rice is soft. Add the sugar and stir until dissolved, then remove from the heat and quickly beat in the egg yolks.

    Divide the rice between individual serving dishes, level the tops, and sprinkle with grated chocolate. Leave to cool, then serve.

  • 500g Short-Grain Rice
  • 1 tsp Salt
  • 900ml Full-Fat Milk
  • 1 tbsp Cocoa Powder
  • 300g Caster Sugar
  • 6 Egg Yolks
  • 4 tbsp Dark Chocolate, grated
