Aged in casks in the traditional Solera system within the ancient cathedral style cellars of Barbadillo, this wine was allowed to oxidise slowly over many years to attain its rich aroma. Oloroso means aromatic.
This ageing process gives this Sherry its dark amber colour, rich walnut aroma and deep, generous flavours. This is pure unsweetened Oloroso so dry to taste.

sharper than other Oloroso
I love the richness of a good Oloroso, dry but rounded. This one was a surprise, not in a good way: it has a level of sharpness that can catch the throat like a rough brandy. So this one's not for me unfortunately.

always have this in for paella
Just keep in the fridge and always use this for paella - its the secret ingredient!
