Our delectable gammon joint comes from the silverside of the leg and is butchered by hand before being cured for 3 days with an additional 5 days of maturation. Once all gristle and bone has been removed, the joint is strung before being gently rubbed by hand with muscovado sugar. Finally, it is is vacuum packed and left to marinate for a minimum of 5 days, sealing in all of the moisture and flavour to create an incredibly tender and succulent joint.
We only use high welfare Outdoor Bred British Pork and work closely with our suppliers and farmers to ensure that our pigs live happy lives.
The Gammon Joint should be cooked in the cooking bag to ensure maximum flavour.

Storage
Preparation and Usage
This is a “cook in the bag” product. Remove the Outer bag leaving the roasting bag intact. Remove the joint from the fridge about 30 minutes before cooking.
Place on a baking tray and place in a preheated oven at 180°C (fan 160°C), gas mark 3 for 30 minutes per 500g, rest for 10 minutes after cooking .
Open the bag and place on a serving plate, check that the product in piping hot or use a food thermometer in the centre of the joint to confirm that it is >70°C.
The joint is now ready to slice.

too sweet
Bought this in flash sales and whilst the cook-in-bag was handy, couldnt taste the gammon as it was overpowered by the muscovado dressing. Cooked it for an hour longer than stated, but it was still much tougher than I would usually expect gammon to be. Wont order again
Special offer?
Had to ask for a refund on this when I bought it on offer. Despite cooking it in the bag, as instructed, it was as tough as old boots with almost no fat. It must have come from the only pig to ever have won Slimmer of the Year award!!! After struggling through a couple of slices, it went in the bin (and I never waste food). Really felt that I'd been conned as it was offered at almost half price.
Tough as old boots
I cooked this in accordance with the instructions expecting a nice piece of gammon, but instead it was full of sinews and as tough as old boots. It's disgusting that these people are allowed to sell such poor quality meat at such a high price - went in the bin.
Pain to carve
Husband said he liked this - it was tasty (I'm vegetarian). It could have been the cut that I had but it was almost impossible to carve.
simply awful
Tiny piece of gammon which was stringy and tough. Dont buy this .
Chewy
Tasted great but was very chewy. We will have the rest tomorrow, cold with salad, but probably wont buy again.
