Nectar shows an intense ebony colour with rich aromas of fruits such as raisins, figs and dates and honey. The palate is velvety and smooth with a rich raisin sweetness, perfect poured over vanilla ice cream.
History
In 1835, Manuel Maria González, a young ambitious man founded a winery in the heart of Jerez. He called on his Uncle Joe (Tio Pepe in Spanish) who had knowledge of winemaking to help him. The modernday winery is still owned & run by the González family who produce an array of multi award winning sherries from their own vineyards in the best Pagos of Jerez Superior. Our talented winemaker Antonio Flores was born in the winery & grew up watching his father make wine here & is a true ambassador for sherry.
Regional Information
Gonzalez Byass is situated in the city of Jerez, Andalusia, in the heart of D.O. Jerez, owning over 800 hectares of vineyard, all located in Jerez superior. This area enjoys a warm and humid climate which helps in the maturation of the grape. The soils of the area are high in chalk, known as 'albariza soil' this helps to maintain moisture during the long dry summers.

Vinification Details
González Byass has the largest single vineyard area of PX in Jerez, a 27hectare single vineyard estate called Esteve in the Carrascal Pago. The Pedro Ximenez grapes are collected from the vine slightly later & in a process called ‘soleo' bunches are laid out on mats in the sun for up to 2 weeks. During this time the grapes raisin and give an intense, sweet juice. This is then aged in the Nectar solera system for an average of 8 years, in American oak casks, on the family estate in the heart of Jerez.

Fine for the price

Dark and rich. Fine for a small glass late at night. Fine addition to puddings and ice cream. Some PX is just too sweet and lack flavour, this brings more to the table.

Perfect for Christmas Day

Ahh, so glad we invested in a bottle of this in October. It's a goodun and goes really well with festive fare. As expected, it's very sweet with lovely grape flavours (thank you, Sr. Ximenez, for growing this delectable grape back in the early 17C!).

Sweet and dark, tick. Bouquet underwhelming.

Lovely and dark, syrupy-sweetness (as it should be, for a Pedro Ximinez), with a wee bit of sediment at the bottom of the bottle. A little note of dates and figs, mebbe? But more muted in terms of sweet dried fruit than I was expecting. Sainsbury-own taste the diff one is heaps better. Disappointed.

Very special

What a wonderful thing - true to its' name. Perfect after dinner in front of the fire. Nice creamy coffee or even hot chocolate to go with it. Love it - though it is definitely in the "stickies" category.
