Garlic & Guajillo Chicken Fajitas
Serves 2/3-30 mins

400g Chicken Breast, thinly sliced
1/2 Tub of Garlic & Guajillo Mix
1 tsp Olive Oil
1 Red Onion, thinly sliced
1 Yellow Pepper, thinly sliced

1. Cover chicken breast with Garlic & Guajillo Mix, toss until covered.
2. Heat olive oil in frying pan over medium heat.
3. Add red onion & yellow pepper & cook for 10 mins.
4. Add chicken strips & cook for another 7-8 mins.
5. Remove from heat & leave to rest for 3 mins.
6. Serve spooned into warm wheat tortillas with guacamole, fresh coriander, live wedges & Gran Luchito Tomatillo Salsa.

Also works great with Vegetables or Steak

Garlic & Guajillo Fish Tacos
Serves 2/3-30 mins

3 tsp Olive Oil
1/2 Tub of Garlic & Guajillo Mix
400g Cod Fillets (or other white fish), cut into small bite-sized chunks
Juice of 1 Litre

1. Make marinade by combining 2 tbsp olive oil with Garlic & Guajillo Mix.
2. Add fish pieces & marinade for 20 mins.
3. Heat 1 tsp olive oil in pan over medium heat. When oil is hot, add fish & cook for 5 mins.
4. Remove fish from heat & leave to rest for 3 mins.
5. Serve spooned onto warm corn tortillas with lime juice, shredded cabbage, coriander & Gran Luchito Tomatillo Salsa.
