Preparation and Usage
Cooking instructions:
1. Rinse thoroughly before cooking.
2. Place 100g of lentils into a large saucepan with 500ml of water.
3. Boil for 10 minutes, then simmer for 30 minutes, until the lentils have softened but are slightly firm to the bite.
4. Drain, rinse and use.

Halloumi Cheese with Roasted Vegetables & Green Lentils
Serves 4
Preparation time: 15 minutes
Cooking time: 50 minutes
Ingredients:
200g Great Scot Green Lentils
500ml vegetable stock, hot
3 mixed peppers, deseeded and quartered
2 large courgettes, sliced thickly
2 tbsp olive oil
2 x 250g packs halloumi cheese, sliced
2 tbsp balsamic vinegar
Method:
1. Bring the lentils to the boil in a pan with the stock and boil for 10 minutes then simmer for 30 minutes until tender. Drain thoroughly.
2. Preheat the oven to 200°C (fan 180°C), Gas Mark 6.
3. Meanwhile, coat the peppers and courgettes in 1 tablespoon of the oil and cook on a baking tray in the centre of the preheated oven for 25 minutes, until lightly browned.
4. Heat the balsamic vinegar in the cleaned lentil pan, add the cooked lentils and cook for 2-3 minutes.
5. Heat the remaining olive oil in a frying pan and fry the halloumi on both sides until golden brown.
6. Serve the lentils, topped with the roasted vegetables and halloumi.

Puy style rather than flat green lentils
These are more of a small "puy" style lentil not like the larger, flat green lentils that I actually needed for the dal I had been planning to make. They are great for dishes where you need puy lentils specifically.

Fragrant...
These lentils are tender when cooked but don't go mushy... They are always good quality and easy to cook... Give them a good wash, add seasoning and a few Bay leaves and they are ready in 20 minutes... So wonderful with chanteney carrots and fresh rocket... Wonderful...
