Preparation and Usage
Oven cook - From Chilled. Electric 160°C, Fan 140°C, Gas 3, 2 hours - 2 hours 30 mins Preheat oven. (all temperatures and times are guidelines only)
Flour the venison shanks, season with salt and freshly ground pepper. Heat 2 tbsp olive oil in a frying pan. Gently fry the venison shanks over a medium high heat for 5 mins or until browned on all sides. Add shank to a large casserole dish, add 500 ml of stock and any vegetables wanted, cover with foil. Place in centre of oven. Cook until piping hot ensuring there is no pink meat and juices run clear.

A rancid smell
This product smells of decomposed meat! I buy venison often from M&S, so I'm familiar with the good quality venison smell. I will never buy from this supplier again, and I have requested a refund.
Good size. Slow cooked well.
Bought these in a flash sale. They are a good size and slow cooked for 8 hours the meat fell off the bone. They werent too gamey. Would definitely buy again.
Mixed feelings….
I love all game and have no problem with a strong gamey smell. This, however, smelled disgusting when unwrapped and when sniffing more closely I found it was the bone rather than the meat. I went ahead and cooked it anyway, didn’t find it as tender as others have done, overall am most disappointed and will not buy again.

Slow cooked
Slow cooked in juniper berries and redcurrant gravy, the meat just fell off the bone, very tender and tasty.
Im unsure about venison
Honestly , so first time trying venison after grabbing on flash sale . I followed previous reviewers and cooked long and slow after searing in a pot with stock , wine , thyme and Bay . These joints vary in size , one was 400g yet another was 630g labelled 400g ??? So my leg was chewy and gristly, others in the family had ones that melted in the mouth . Very Gamy , not sure its a joy Id care to repeat but if you love game these are fine .
