Dover Sole is an long oval shaped flat fish which is highly prized for its fabulous taste and texture. It has a small head, light mottled skin and a creamy underside, with a firm but delicate flavour. Thanks to a successful sole recovery plan the population in Cornish waters are healthy and responsible. Premium fish which is perfect for an impressive dish for entertaining.

Preparation and Usage
Heat over to 190 degrees. Place the whole fish in a baking dish with butter, capers, salt and pepper and simply roast until cooked - approx 10 -15 minutes. It is cooked when you can insert a small knife and see that the delicate flesh is opaque and flaky. Whole fish will contain bones.

Disappointing
I bought this as a birthday treat and was very disappointed. There was barely any flesh on the bones - just awful.
Not fresh
It was smelly and the taste was unpleasant. Also, it wasn't completely cleaned and gutted, which didn't help.
One side side is already skinned
I cook mine in the fan oven at 180 for 10-12 minutes approximately, brown skin side down with butter, lemon slices and a little white wine. I serve it on the plate with the skin side down and it’s easy to fillet. This has always been successful.

First time Ive cooked whole Cornish Dover sole. Googled how to prepare and was a little daunted by the thought of skinning a fish however it really was easy peasy! Husband was sceptical and shrivelled his nose when I said I was cooking Dover sole. At the end of the meal however he said it was fantastic and he was converted. Lightly floured and pan fried in butter with capers. Served with samphire and Picards potato gratin bought on Ocado.

I cooked this fish in the oven with lemon slices, butter and olive oil. It was delicious! The best fish Ive had for a while.
Horrible
It smelled horrible when cooked and it lingered in the house for days. I opened windows and used scented candles, my husband still thinks there is a smell there.
