This structured wine offers a soft mouthfeel, and subtle flavours of red fruits. Pair with prepared cuts of red meat and mild cheeses. Perfect with leg of lamb with figs or beef tenderloin with caramelized red onions.
History
The Bichot Family started a relationship with the House of Jean Bouchard in 1926, going on to purchasing the House in 1955 and in the time that has followed their wines have gone from strength to strength.
Regional Information
Formerly dependent on the Cîteaux Abbey, the small village of Chambolle-Musigny is located at the heart of the Côte de Nuits, between Vougeot and Morey-Saint-Denis. The vineyard is located on the east and southeast-facing slopes of Chambolle-Musigny where the soil is brown limestone based.

Vinification Details
Vinification takes place in temperature-controlled open vats (28/30°C) with regular punching of the cap followed by 12 to 14 months ageing in oak barrels with a maximum of 15% new oak.

Rather spicy expression of CM

I’m getting a dark fruit profile; black berries, blackcurrant … and dark winter spices; black pepper, cassia bark … almost garam masala on the nose. Rather opaque in the glass and carries some sort of soft weight behind its med- body and med- acidity.

We drunk a 2012 bottle. You definitely need to open the bottle at least half an hour before you serve it. Beautiful aromas. Stay very long in the mouth. I won't probably drink this wine every day - even if I would love to - but will definitely order it again for special occasions or when we are having guest for supper.
