Serves 4
An indulgent Italian dessert with creamy coffee depth.
3 Medium eggs
250g Mascarpone
50g Soft brown sugar
15 Sponge fingers
80ml Strong cold coffee
2tbsp Marsala wine or amaretto
Cocoa powder for dusting
Serve chilled
1. Separate the egg whites from the yolks, keeping the whites.
2. Mix the yolks with the sugar until fluffy and airy.
3. Add the mascarpone to the sugar and egg yolks.
4. Whisk the egg whites until they are firm and hold their shape, then fold gently into the yolk mixture.
5. Mix the cold coffee with the Marsala wine or Amaretto.
6. Soak the sponge fingers with the coffee mixture.
7. Place half the sponge fingers into a rectangular dish so that they cover the base.
8. Take half of the mascarpone and egg mix and spoon over the sponge fingers.
9. Create a second layer of soaked sponge fingers and then spoon over the rest of the mascarpone mixture.
10. Chill in the fridge for at least four hours.
11. Just before serving, gently dust the top with cocoa powder.

Soft - Not Brilliant
Bland taste and texture not nearly as nice Arden & Amici on which have mysterious ly disappeared from the list and these materialised in their place. Disappointing M&S you can do better also whatever happened to trifle sponges??
Not bad
The tiramisu turned out better than expected. Bit soggy but better than what I've used before.
Trifle sponge fingers
love it's separately wrapped into two batches. I made strawberry trifles with this and love the result, but this is sweeter than the one I usually buy from Waitrose. If I have to make trifle or tiramisu with this again, I'd reduce the amount of sugar in cream
Not the best
Used in tirimisu and was ok but went soggier, but a bit chewy in the middle. Used Tesco own brand last time and they were better
Perfect for tiramisu
I was a bit skeptical ordering these after reading mixed reviews but went with them last minute and they were absolutely perfect in a tiramisu, not too sweet. Will definitely buy again.
Very sweet.
These are not trifle sponges as I know them rather they are Lady Fingers/boudoir biscuits which are slimmer and more sugary than traditional sponges, which I used to split in half and spread with a loganberry jelly then soak with fruit juice and alcohol of choice. They will work for a trifle but will make it sweeter and more of a faff to make.
