Instructions
Bring water to the boil. Add noodles, cover and remove from heat. Allow to stand for 5 mins, drain and serve immediately. Alternatively if stir frying stand for 4 mins, drain and rinse in cold water then follow recipe.

Pad Thai Noodles
Serves 4
Ingredients
1 pack M&S rice noodles
2 tbsp vegetable oil
2 shallots
300g prawns (or chicken)
200g shaved carrots
100g bean sprouts
4 spring onions, finely chopped plus extra for garnish
2 eggs
2 tsp fish sauce
1 1/2 tbsp sugar
1 1/2 tbsp tamarind paste ground salted peanuts lime, cut into wedges*

Prepare the Rice noodles as per on pack instruction. Heat the oil in a pan and stir-fry the shallots and 3 spring onions for 2 mins. Add the prawns and stir fry until just cooked. Add the carrots, bean sprouts, fish sauce, tamarind paste and sugar and stir fry for 2 mins. Push the mixture to one side, pour in the egg and cook until lightly scrambled. Lower the heat and add the freshly rinsed noodles and the peanuts. Garnish with lime wedges and the remaining spring onion.

Try them cold
I make a poke bowl and add these noodles ice cold with the M&S ready cooked teriyaki salmon and edamame beans, radish and a bit of pickle. Very good on a hot summers day

Excellent noodles
BUT annoyingly now never seem to be available.
ramen or pad Thai staple
These are a staple. Just perfect to have in the cupboard. Everyone in the household looks forward to it
Soak for perfection
These noodles really are the nuts. I make proper pad Thai from scratch (with preserved radish) and these dont let me down. Never ever cook them if you can help it. Soak them in room temp water for several hours. I dont know what the minimum is, but I know I wont go wrong if I put them in a tub of water in morning before work for dinner that night. With a good liquid stir fry the noodles absorb the sauce and the texture is perfect.
Perfect noodles
These are really great - easy to add to soups and currys, only need a couple of minutes of soaking before use. They have been unavailable recently... Ocado - don't get rid of them!!!
