Seasoned to perfection
This is the classic Finocchiona made using both fat and lean meat from the belly and shoulder of Italian pigs, and incorporating a long maturing process in humid, dark cellars.
Velvety-smooth on the palate, its appearance is rosy and friable, hence the traditional Tuscan name sbriciolona, meaning crumbly. It is seasoned with salt, pepper, spices and wild fennel (finocchio) seeds. In a product like this, the balance of the key flavouring element - in this case fennel - is paramount. If used in excess it becomes overwhelming and unpleasant.

Did not enjoy the texture or taste of this. May have had a bad batch.
four-inch diameter sausage
very large, but nicely thin slices, about ten. Tasty lith strong peppery aftertaste. If you like Milano salami, you might try this one.
Remove from fridge 30-60mins before use and wrap around a matchstick of cheddar. Serve with a Martini.
Best fennel salami
Expensive but extremely good flavoursome salami. Top quality product.
Very pale and very fatty
Had to be eaten by next day. This may be salami but not as we know it. Will never buy again. Quite dreadful.
I agree with other reviewers that this salami was very fatty and tasted old and not in a good way. I got it in a flash sale so 5 slices were just about value for money when reduced to half price. But if Id paid full price, I would have been disappointed by the quantity.
