ABOUT THE DISH
Melanzane alla parmigiana, or aubergine parmigiana, is a dish emblematic of the Italian south. In the sunny climes of regions like Apulia, Campania and Sicily, aubergines are widely cultivated and enjoyed as a nutritious and filling crop. Aubergines were first introduced by the Arabs, who, for a time, held sway in this part of the world, but most notably in Sicily, where arabesque architecture can still be found to this day, as well as other influences from its exotic and chequered history.
The parmigiana, perhaps the most documented aubergine dish, sees slices of aubergine layered alongside plenty of cheese - traditionally mozzarella and Parmesan, though other local cheeses, such as scamorza, a sort of smoked mozzarella, or Grana Padano can also be found. Our version comprises both mozzarella and Grana Padano, alongside tomato sauce and seasoning. This rustic dish is primarily to be enjoyed as a contorno, or side dish, but, for those with more modest appetites, can also make for an amply sized main.

Preparation and Usage
1. Preheat your oven to 200C and place a baking tray in the middle of the oven.
2. Take your pasta out of the fridge 10 minutes before cooking.
3. Remove the card sleeve and film from the pasta but leave it in its card tray.
4. Place the pasta in its card tray directly on the baking sheet and cook for 20 minutes, until piping hot.
5. Remove your pasta from the oven and allow it to rest for 5 minutes before serving.

Awful
More sauce than veg. Aubergine cut way too thickly and grilled instead of fried. Not good at all. Theres a better version Ocado sells in the frozen section
Rich tomato sauce
I bought this in a flash, having read the other reviews cooked for extra 5 mins which thickened the sauce to right consistency. Really rich lovely tomato sauce, really good size portion for 2, it did have a lot of parmesan cheese through it so didn't feel the need to add any extra cheese.
Mixed reviews but was nice
I was a bit sceptical after such mixed reviews, but overall enjoyed it, nice flavour & texture.
Not worth £8.50
Bought this on flash sale so it was a good value , but as some other reviewers said it doesn't have much cheese .I added a sliced cheese and ate it. Nice tomato sauce but it didn't feel anything special. Also the cooking instruction is odd -it keeping calling this dish "pasta" .This is not pasta at all .

Great flavour but we found the aubergine undercooked for our taste despite giving it slighty longer cooking time. Also, expensive at full price.
Waste of money
Nothing like the real Parmigiana. The aubergines are cut far too thick and they are cooked raw. In the Parmiggiana they should be fried or grilled. The tomato sauce has big chunks of tomatoes and there is very little cheese in it. I expected a lot better from Pasta Evangelista, especially at this price point.
