Preparation and Usage
Recipes
Ingredients:
280ml water, 1/2 tsp salt, 20g oil, 330g Schär All-Purpose Baking Mix, 1 tsp xanthan gum and 1 tsp fast action yeast.
Method:
Place the ingredients in the bread maker, in the order shown in the ingredient list. Select the standard basic 1hr 55 setting (select dark crust option). Remove from the machine and leave to fully cool before cutting.
Top tip: Once the dough has risen in the machine, wet a spatula with warm water and smooth over the top of the dough
Victoria Sandwich Cake
Makes: 2 x 20cm cakes
Ingredients:
200g Schär All-Purpose Baking Mix, 2 tsp of gluten free baking powder, 175g soft margarine or soft butter, 175g caster sugar, 3 eggs (beaten), 50ml milk, 1 tsp vanilla extract jam for filling, whipped cream (optional) and icing sugar for dusting the top.
Method:
Place the butter and caster sugar into a mixing bowl and beat well for 2- 3 minutes using an electric mixer, until the mixture is light and pale. Add the eggs a little at a time, beating until the mixture is light and fluffy. Add the remaining ingredients and beat well for a further minute. Divide evenly into 2 x 20cm lined cake tins. Bake in preheated oven 160C Fan/Gas Mark 4 oven for 25 - 30 minutes, until the cakes spring back when lightly touched. Remove the cakes from the oven and leave them to cool. Sandwich together with jam and whipped cream (if using). Sprinkle the top with icing sugar.
Shortcrust Pastry
Makes: 23cm/ 9in flan dish, 20cm deep flan dish, topped and bottom pie 18cm. 12 deep mini quiches or 12 mince pies.
Ingredients:
250g Schär All-Purpose Baking Mix, 125g soft butter, 1 medium egg (beaten), 1 - 2 tbsp cold water.
Method:
Place Schär All-Purpose Baking Mix into a mixing bowl, rub the butter into the flour until it resembles breadcrumbs. Make a well in the centre, add the egg and water to give a soft but not sticky dough. Transfer dough to a surface dusted with some All Purpose Baking Mix, knead for 1-2 minutes. Chill in the fridge for at least 30 minutes until ready to use, then roll out and use as desired.
Top Tip: Use a spreadable butter.

so far the best
Best gf flour for cakes and pastries tried so far.
Shame has HMC in it
Need more gluten free bread, pittas etc without HMC in them. M & S are doing well with a few products now. Thanks for stocking these

I have tried so many GF flours catering for my coeliac friends and this is by far the best.
best GF four
This is the best GF four Ive tried so far! It makes fantastic pizzas and focaccias (I use brewers yeast) The first time I used it, I made focaccia and I was amazed because it came out so bouncy and delicious I had to look twice at the ingredients to make sure it didnt have gluten. Wasnt so great for a choc chip sponge cake I attempted to bake but Im pretty sure it was me messing it up , Ill try againif not Im Happy Ive found the prefect four for pizzas at last !

Why have they changed the recipe?
This used to make the most delicious vanilla sponge cake. However today I used it to make a cake and the cake came out quite disgusting - wet, heavy, tastes uncooked but very brown on top. I thought I must have done something wrong so I made another one and it was the same. Then I noticed it said new recipe on the packet. Why have they done this? It was so nice before, but I wont buy this again now.
