Biryani is an Indian favourite with foreign beginnings. Its origins are with the Mughals of Central Asia, where it was originally a meat and rice dish. But once they brought it to India, it gained in complexity with the use of spices and different regional influences as it travelled through the sub-continent. Our biryanis reflect these historical heritages in their many layers of flavours.
Our Malabar biryani is a wonderful balance of the spicing from this region, interwoven with rich tomatoes and balanced with a touch of creamy nuttiness from white poppy seeds and coconut. It is redolent with coastal flavours.

Preparation and Usage
For an authentic Malabar Biryani, stir-fry some cashew nuts and raisins until golden and puffed up respectively. Use to garnish your biryani along with some crispy onion slices.
For an added elegance, simmer a good pinch of saffron strands in 4 tbs. milk and reduce by half. Spoon over the rice, along with a few small cubes of butter. Cover well and cook on a very low hob until everything is steamy or, bake covered at 180°C for 15-20 minutes to allow flavours to infuse.
For added depth of flavour, use chicken with bone-in or leg of lamb (the cooking times will change).
Not Suitable for Microwave Use.
Recipes
200g of chicken fillets or lamb rump*, seafood, vegetables or anything. Optional crispy onions to garnish.
*Other cuts will take longer to cook.

2 tsp. of vegetable or coconut oil
Three Simple Steps
1. Fry the spices and aromatics in 2 tsp. oil in a small-lidded pan for 20 seconds (taking care not to overheat the oil).
2. Add your fresh ingredients and the contents of the sauce packet. Simmer until they are cooked to your liking. Add a little water as necessary, the sauce should be lightly creamy.
3. Massage the rice in the packet to break up any clumps. Layer the rice evenly on top of the "curry". Cover and steam over the lowest heat for 5 minutes if you are rushing or 15 minutes if you have the time to allow the flavours to infuse.
Serve garnished with crispy onions.

My fave out of the range
Pleasantly surprised
Was worried after reading the last couple of reviews but we enjoyed it! I used chicken thighs and cauliflowers, steamed on low heat at the end as recommended and thought it was great! Also added some crispy onions to serve. We didnt find the coconut flavour overwhelming at all. Would buy again for a quick and easy weekday meal
disgusting
I had another version, I think the hyderabadi and it was good and quick so thought I would try this. My husband hates cloves and I dont mind them but I literally couldnt eat this because the taste of cloves is so overpowering it made me feel sick. Really sad
Didn't like this
Disappointed with this meal. Had a strange, sour flavour. Managed to rescue it by adding curry powder and some mango chutney. Don't think it was off (it had more than 9 months left until expiry date, so unlikely). So won't buy this one again.

Good for three if you add a good amount of protein and veg. I add some extra water to thin the sauce slightly, I have no idea how authentic it is ...
Great, but
Really easy to follow and tasty, however there is insufficient rice for 2 people - you end up with little rice and predominantly the main ingredient you've added which is wrong for biryani which is supposed to be a rice dish first. With that in mind it's not particularly filling.
