The Caseificio (Dairy) Valcolatte brand represents a culmination of dedicated study and refinement. It carries the rich legacy and values of a company with roots dating back to 1914. The company’s origins trace to Stagno Lombardo, Cremona, when Enzo Panizzi secured a dairy contract before departing for World War I, leaving his grandmother Cesira in charge. Upon his return, he found the dairy thriving in Monticelli d’Ongina with a well-stocked warehouse. The Panizzi family, including six children, continued the cheese-making tradition. In 1960, Ciro Panizzi, Enzo’s father, relocated production to Montanaro. With the help of Enzo and Liliana, the company transitioned from Panizzi to Valcolatte, focusing on fresh cheese production. Giuseppe Villa, Liliana’s father and a successful entrepreneur, provided crucial support to the dairy entrepreneurs.

really good mozarella
No trouble melting
Took out of fridge drained whey off and put in bowl probably an hour before use in my cold kitchen. I found it peeled really well so I used on my Crosta Mollaca base and cooked my pizza for ten mins and it performed exactly as I expected melting and browning. Flavour-wise I’ve had better fior di latte but my pizza was still really tasty.
Doesn\x27t melt
If you are after a mozzarella that melts and has that lovely stringy gooey quality, this isn't it. It stayed in exactly the same shape after having been in the oven and, quite frankly, had a plasticky texture once it cooled down. Maybe better cold in salads?
Tastes cheap
The M&S own brand one tastes better. Texture was also dry and spongy

I ordered this as it was on offer and cheaper than the one I buy regularly. Texture was ok but the taste wasnt that nice. I wont buy again.
