Vasterbottensost, with it's aromatic and piquant taste, holds a very special place in Swedish cheese history. The cheese, which was a result of coincidence, has been manufactured in Burtrask in the county of Vasterbotten since 1872.
The myth has it that an attentive suitor distracted dairy maid Eleonora Lindström so much that she forgot about the cauldron standing over the fire, in which she was making cheese. The fire went out time and time again and Eleonora had to keep re-lighting it. This meant that the cheese-making process was prolonged and the cheese was heated up and stirred more times than normal.
Because these were meagre times, the over-cooked cheese was not thrown away but instead put on a shelf and left to its fate. Not until much later did someone think of tasting it. But as soon as it was sampled, people immediately realized how special it was. No one had ever tasted a cheese like it! Strong, aromatic and piquant.
Whether the love story is true or not, we cannot say but some people believe that Eleonora knew very well what she was doing when she created the Vasterbotten cheese.
Either way, we now know that the end result was very successful! Vasterbotten holds a very special place in Swedish cheese history. It has received many awards and is praised by people from all walks of life. It has also been honoured with the title "By appointment to his Majesty the King of Sweden".

strong tasty cheese
Great tasting cheese. Good depth of flavour. it is expensive so I buy it when on offer
Tangy cheese
Strong flavour with a tang, very hard too so good for grating. A change of flavour but t is expensive so will stick to vintage cheddar most of the time as better value.

Great full flavoured hard cheese, swedens answer to Parmesan. Great with herring or in a quiche
superb - and fab to find a new cheese
Delicious!! I hesitated because of the price and some of the negative reviews but decided to buy anyway and soooooo glad I did. So tasty on its own (like a creamier Parmesan) and fantastic grated on Bolognese. Also had thin slice with fresh Natoora (properly big and flavoursome) peach - yummy!! Definitely will buy again. Its a big chunk but think it will go a long way. Would say it would last a long time, but its so tasty it may not. Price wise its on a par with Parmesan and I think quantities used per dish will be similar.
