Preparation and Usage
Cucumbers are refreshing and juicy, so they are best enjoyed cold and raw. Wash before use, but there is no need to peel the organic skins off– they add delicious crunch and flavour!
SALADS: Dice, julienne, shave or thinly slice, before tossing with other ingredients. Cucumbers pair especially well with eggs, smoked fish, tomatoes, radishes, peas, lemon, mint, dill and parsley.
DIPS: Cucumber is a great addition to yoghurt-based dips, such as the classic Greek tzatziki or Indian raita. For tzatziki, stir grated cucumber, garlic, lemon, fresh mint, dill and olive oil into Greek yoghurt. For raita, use garlic, lemon, mint, coriander, and a pinch of ground cumin. This is a delicious accompaniment to spiced roast meats or vegetables, or to top fiery curries!
PICKLES: Chop, then sprinkle with salt and set aside to sweat, before squeezing and draining the liquid off. Submerge in brine or a vinegar solution with spices and herbs before leaving to ferment. Some common additions are garlic, dill, mustard seeds and peppercorns.
