Preparation and Usage
150ml (3/5 cup) water
100ml (2/5 cup) oil
2 eggs or YesYouCan Vegan Egg Replacer
Ganache Topping
60ml (1/4 cup) fresh cream
20cm (8in) 1 high edge round cake tin
Cooking Instructions:
1 Preheat oven to 160°C (fan forced) or 180°C (conventional oven)*.
2 Grease cake tin or spray with vegetable oil.
3 Combine water, eggs, oil and the chocolate mud cake mix in a small mixing bowl.
4 Fold mixture with a wooden spoon. Scrape down sides of bowl.
5 Pour batter into a greased cake tin and bake for approx. 45 - 50** minutes.
Cake is baked if it bounces back when gently pressed at the peak of the cake.
6 Remove cake from the oven. Leave in tin for 10 minutes before placing it upside down on a wire rack to cool.

Ganache Topping
1 In a sauce pan, heat 60ml (1/4 cup) fresh cream (on low heat).
2 Add packet of chocolate buttons and stir until pieces are blended through.
3 Let chocolate topping cool for 2 minutes then pour over cooled chocolate cake.
4 Dip knife or spatula in warm water and smooth topping over cake.
Serving Suggestions: Add strawberries for a beautiful decoration.

Pre-Heat

Chocolate Ganache Icing
Place icing mix and water in a microwave safe bowl and heat on High for 20 seconds. Remove and mix with a wooden spoon until combined for 1 minute. Add the softened margarine (dairy free) or butter and mix until combined and glossy. Pour ganache evenly over cooled mud cake, cupcakes or brownies and spread out with a spatula
Chocolate Frosting (Alternate)
Cream 60g margarine (dairy free) or butter in a small bowl using an electric mixer (on medium speed) for 2 minutes until smooth and fluffy. Reduce to slow speed and slowly add the icing mix. Scrape down sides of the bowl. Using a knife or piping bag, spread frosting evenly over the cooled mud cake, cupcakes, or brownies.

NOT GOOD.
Oversweet even without the icing and not very chocolately to taste. Wrights chocolate cake mix far superior and now available from Tesco and Sainsbury.
No we cannot
The name of this product got my hopes up for finally finding a truly free from cake mix, however, for people with Soy and milk allergy and also cannot have tapioca, we can't have this. The search continues. No tried this product because of allergens.
shame not organic but makes a great cake
My husband and I enjoyed this. It was an out of date packet by the time I used it- by 6 months and still tasted fine too.
not great
Very unpleasant texture and taste. Tried 1 mix as a cake and 1 as muffins. The muffins didnt cook properly and the cake was a horrible texture and taste. Would need more cocoa added too. The only saving grace is the frosting, which is just chocolate you melt and add cream. Sadly the actual cake parts went in the bin.
Remarkable and easy
I'm really impressed with this as an easy way to make an allergy safe cake, and the rest of the family enjoy it too! we prefer it fresh out of the oven, and do find it can be a bit dry if kept for a few days, but it makes an excellent mud cake pudding served with cream/vegan alternative.

Wouldn't buy this again. Baked for 45 mins. Was dry & very synthetic tasting and left my mouth feeling sore. No depth of flavour. Will stick to making my own using decent quality cocoa in future.
