
Argentinian Steak and Chimichurri Salad

Ingredients
- 1 tbsp of olive oil
- 340 g of sweetcorndrained and rinsed
- 56 g of parsley, for the chimichurri
- 1 tin of black beans, drained and rinsed
- 290 g of red peppersdrained and roughly chopped
- 28 g of coriander, for the chimichurri
- 3 tbsp of red wine vinegar, for the chimichurri
- 4 sirloin steaks, fat trimmed if preferred
- 1 red onion, diced
- 1 large avocado, chopped
- 2 garlic cloves, for the chimichurri
- 1 tsp of ground cumin, for the chimichurri
- 1 tsp of chilli powder, for the chimichurri
- 0.6 tbsp of olive oil, for the chimichurri
Method
Step 1
Make the chimichurri: in a small food processor, whizz all the sauce ingredients together, taste, season and add more chilli or cumin to taste.Step 2
Heat the oil in a frying pan and cook the steaks for 2-3 mins on each side, depending on how you like yours.Step 3
Toss together the red onion, beans, sweetcorn, peppers and avocado, then stir in the chimichurri. Slice the steak and serve on top of the salad.
