Ingredients
- 3 mini tortilla wraps
- 3 tbsp tomato purée
- 60 (approx.) slices hot and spicy pepperoni
- 173g pot flame-seared artichokes, cut into bite-sized pieces (keep the marinade from the pot)
- 30g grated parmesan, plus a little extra
- 1 small handful basil leaves, to finish
Method
Step 1
Preheat the oven to 180°C/160°C fan/gas 4. Spread each mini tortilla wrap with 1tbsp of the tomato purée, then slice into canape-sized pieces (aim for approx. 30 in total).Step 2
Top each one with 2 slices of pepperoni and a piece of artichoke, plus a drizzle of the marinade from the pot.Step 3
Bake for 10 mins, then scatter over the grated parmesan and bake for 3-5 mins more.Step 4
Garnish with basil leaves, scatter over a little more parmesan and serve.
