Asparagus Pastry Tartlets with Goat’s Cheese

These simple vegetarian tartlets can be made in just 30 minutes.

Ingredients

  • 125 g of asparagus
  • 1 tbsp of flour
  • 3 tablespoons of sun-dried tomatoes, roughly chopped, plus 1 tablespoon oil from the jar
  • 125 g of vegetarian goat’s cheese, crumbled
  • 2 handfuls of rocket
  • 375 g of ready rolled puff pastry
  • 2 tablespoons of balsamic vinegar, to drizzle

Method

  • Step 1

    Cut the pastry into four rectangles and place onto a floured baking tray. Score the edge of each rectangle with a sharp knife.
  • Step 2

    Brush each rectangle with a little oil from the jar of the sun-dried tomatoes. Scatter the chopped sun-dried tomatoes, asparagus tips and goat's cheese on each rectangle, within the scored lines.
  • Step 3

    Place in the oven for 12-15 minutes.
  • Step 4

    Remove from the oven. Toss the rocket in a little balsamic vinegar and place on top of the tartlets to serve.
