Ingredients

  • 4 potato rosti cakes
  • 220g white or green asparagus
  • 100g hollandaise sauce
  • 1 (70g) pack bresaola
  • 1 small handful tarragon leaves, finely chopped

Method

  • Step 1

    Cook the rostis as per pack instructions.
  • Step 2

    Meanwhile, steam the asparagus until tender and warm the hollandaise in the microwave (or in a pan).
  • Step 3

    When ready, pop 2 rostis on each plate and top with the asparagus, a few slices of bresaola, some hollandaise and the tarragon.
