Whipped up by chef and author Rachel de Thample, these gloriously green Avocado Matcha Puddings taste as fabulous as they look – and they tick lots of health boxes too. “As well as being a source of fibre, these creamy vegan puds are made with chia seeds, which adds iron into the mix – handy for tackling tiredness,” says Rachel. Ingredients

  • 4 tbsp chia seeds
  • 300ml (approx.) cashew milk (or use almond or oat milk)
  • 1 ripe small avocado, halved
  • 4 pitted dates
  • 1 tbsp matcha green tea, plus extra
  • 1 small handful mixed berries

Method

  • Step 1

    Soak the chia seeds in the milk for 20 mins to thicken.
  • Step 2

    In a high-speed blender, blitz the chia mix until smooth. Add the avocado, dates and matcha and blitz again. Add matcha to taste.
  • Step 3

    Chill in glasses for 30 mins or up to 2 days. Serve topped with berries.
