Banana pancakes are a family favourite for a reason, great value, easy to make and even easier to eat. We’ve switched up the usual treatment of mashing bananas with the batter and turned them into cute banana-filled pancake bites – perfect for snack pots on-the-go or piling high in the middle of the table and digging in! Ingredients

  • 25g butter, plus extra to fry
  • 1 tbsp caster sugar
  • 1 medium egg
  • 200g self-raising flour
  • 215ml milk
  • 3 bananas

Method

  • Step 1

    Put the butter in the bottom of a heatproof mixing bowl and microwave for 30 secs, or until just melted. Whisk in the sugar then set aside to cool slightly.
  • Step 2

    Whisk in the egg and beat until smooth. Add half the flour and half the milk, whisk until smooth then add the remaining flour, milk and a pinch of fine salt, then whisk again until smooth.
  • Step 3

    Heat a little butter in a large non-stick frying pan over a medium heat, once melted spread over the base of the pan.
  • Step 4

    Slice the bananas into ½cm thick discs. Stick the bananas slices onto the end of a fork or skewer and dip into the pancake batter to fully coat. Add to the hot pan and gently slide the fork/ skewer off the banana slice, fry for 1-2 mins on each side then repeat until all of the banana is used up. Use any remaining batter to make mini pancakes.
