Ingredients
- 250ml cider vinegar
- 170g caster sugar
- 140g okra, cut into 2.5 cm chunks
- 2 tbsp cajun seasoning
- 150g cooked and peeled king prawns
- 1 lemon, juiced
- 100g baby tomatoes, halved lengthways
- 2 fresh jalapeños, sliced into 4 mm rounds
Method
Step 1
Warm the vinegar in a small pan over a low heat and whisk in the sugar until dissolved (it doesn’t need to boil). Set aside to cool.Step 2
Put the okra in a clean airtight container; cover with the vinegar mixture, pop the lid on and chill overnight.Step 3
Scatter the cajun seasoning over a large plate. Dress the prawns in the lemon juice, then toss in the seasoning to coat.Step 4
Take approx. 8 cocktail sticks and thread them in this order: a tomato half, 1 or 2 pieces of okra, a prawn and a jalapeño ring. Repeat until everything is used up.Step 5
Recipe Tip: Allow extra time for the okra to pickle overnight.
