Caramelised Brussels Sprouts with Butter Beans and ‘Nduja

Created to cut down on food waste after Christmas, this caramelised Brussels sprouts with butter beans and ‘nduja recipe from MOB is the perfect way to use up leftover sprouts but tastes fantastic at any time of the year. The sprouts take on a beautiful colour when they’re cooked down with spicy ‘nduja and creamy butter beans. An excellent recipe that uses cupboard essentials like plum tomatoes and garlic and adds a smoky punch from the ‘nduja and extra texture from the butter beans.

Ingredients

  • 1 drizzle of olive oil
  • 1 tbsp of ‘nduja
  • 2 cloves of garlic, sliced
  • 400 g of plum tomatoes
  • 2 tsp of salt
  • 0.5 lemon, zested and juiced
  • 1 bunch of parsley, chopped
  • 500 g of brussels sprouts, trimmed and quartered
  • 800 g of butter beans

Method

  • Step 1

    Place a large frying pan over a high heat and add a good drizzle of olive oil. Add the sprouts and cook for 3-4 mins until golden.
  • Step 2

    Reduce the heat to medium, add the ‘nduja, and the garlic, cook for another 2 mins.
  • Step 3

    Drain and add the butter beans and then tomatoes. Add the salt, then simmer for 15 mins, breaking up the tomatoes a bit with a spoon as they cook.
  • Step 4

    Once the sauce has thickened down, add the zest and juice of half a lemon. Taste and season.
  • Step 5

    Plate up, top with parsley and a good drizzle of olive oil.
