
Catalan Style Spinach

Pine nuts and sweet, juicy raisins add texture and flavour to these lovely greens.Cook's tip: To plump up the raisins steep in warm water for 5 mins beforehand.Time and servings

Ingredients
- 3 tbsp of pine nuts
- 300 g of baby spinach, washed
- 3 tbsp of extra virgin olive oil
- 2 cloves of garlic, peeled and sliced
- 3 tbsp of raisins
Method
Step 1
Steam the spinach for 2-3 mins, until just wilting, then drain thoroughly.Step 2
Heat a large frying pan over a medium heat. Pour in the olive oil to cover the bottom.Step 3
Sauté the garlic for 2 mins.Step 4
Add the raisins and pine nuts and sauté for 1 min more.Step 5
Add the drained spinach to the pan and mix well to coat with oil. Season to taste and serve.
