
Celeriac & Fennel Slaw

Crunchy and light, this winter slaw features raw celeriac and fennel matchsticks in a fresh lemon dressing. It's perfect as a side dish, salad or paired with fish – try it alongside grilled mackerel fillets for a healthy seasonal supper. Time and servings

Ingredients
- 1 bulb of fennel, cut into matchsticks
- 1 red onion, finely sliced
- 0.5 lemon, juice
- 1 handful of fresh parsley, chopped
- 4 tbsp of walnuts, toasted and chopped
- 2 drizzles of extra virgin olive oil
- 1 celeriac, peeled and cut into matchsticks
Method
Step 1
Place the celeriac and fennel matchsticks in a large bowl.Step 2
Add the red onion and the lemon juice. With your hands, mix the juice evenly into the vegetables (celeriac turns brown quickly, so this will prevent discolouration).Step 3
Add the chopped parsley, toasted walnuts, and a good glug of extra virgin olive oil. Season well, mix and serve.
