
Charred Corn Salad

Ingredients
- 4 fresh corn, husks removed
- 3 tbsp of cider vinegar
- 3 tbsp of extra virgin olive oil
- 12 cherry tomatoes, halved
- 0.5 red onion, finely diced
- 2 tbsp of vegetable oil, or rapeseed oil
- 20 g of fresh basil
- 1 garlic clove, crushed
Method
Step 1
Preheat a griddle pan over a high heat.Step 2
Rub the corn with the oil and sprinkle with salt and pepper, then palce on the griddle and char for about 3 minutes each side. Once the corn has cooled, slice the kernels off each cob.Step 3
To make the vinaigrette, pulse the basil and garlic in a blender until the basil starts to break down. Add the vinegar and keep pulsing while adding the oil in a steady stream until smooth.Step 4
In a large bowl combine the corn, tomatoes and red onion. Drizzle the vinaigrette over the salad and toss. Season with a bit more salt and pepper to taste.
