
Chicken with Tomato, Garlic, Tarragon and Olives

Ingredients
- 20 g of bacon lardons
- 4 chicken breasts
- 200 ml of white wine
- 1 jar of seeds of change® tomato and garlic sauce
- 200 ml of chicken stock
- 1 lemon, the zest of
- 3 tablespoons of tarragon
- 2 cloves of garlic
- 2 tablespoons of olive oil
- 50 g of pitted green olives
Method
Step 1
Season the chicken with freshly ground pepper. Heat the oil in a large frying pan and fry the chicken, skin side down, until golden brown. Turn over to brown the other side, then remove from the panStep 2
Add the bacon lardons and garlic to the pan and fry until golden.Step 3
Add the lemon zest and then the wine. Simmer until the wine has reduced by two thirds.Step 4
Add the chicken stock, the Seeds of Change Tomato & Garlic Sauce, the olives and half of the tarragon. Put the chicken breasts back in, then simmer for 25 minutes until the chicken is cooked and the sauce has reduced by half. Scatter the rest of the tarragon leaves on top and serve.
