Ingredients
- 1 tbsp chipotle paste
- 1 tbsp chopped chilli peppers
- ½ tbsp ghee
- ½ tbsp olive oil, plus a drizzle for the broccoli
- 1 tsp maple syrup
- ½ tsp medium curry powder
- ½ tsp sesame oil
- 2 cod loins
- 125g Tenderstem broccoli tips
- ½ bunch salad onions
- 250g mixed grains
- ½ lime, cut into wedges, for squeezing over
Method
Step 1
Combine the chipotle paste, chopped chilli peppers, ghee, ½ tbsp olive oil, maple syrup, curry powder and sesame oil. Pour over the fish and put in the fridge to marinate for 1 hr.Step 2
Toss the broccoli with the salad onions in a little olive oil on a baking tray; roast for 10 mins at 190°C/170°C fan/gas 5. Add the marinated fish and roast for 10-12 mins more until cooked through.Step 3
Heat the mixed grains as per pack instructions. Serve with the fish, veg and lime wedges to squeeze over.
