Ingredients
- 150 g of mandarin marmalade
- 100 ml of double cream
- 1 handful of flaked almonds, (toasted), optional
- 12 brioche swirls
- 100 g of soft dried apricots, chopped
- 75 g of mixed raisins
- 200 ml of whole milk
- 50 g of butter, softened
- 50 g of soft brown sugar
- 3 eggs
- 1 tsp of allspice
- 4 scoops of ice cream, to serve, optional
- 1 clementine, zest and juice
- 1 tbsp of icing sugar
Method
Step 1
Preheat oven to 180°C/160°C fan/gas 4.Step 2
Put the fruit with the clementine zest and juice in a pan, bring to the boil then turn the heat off and set aside.Step 3
Cut the brioche swirls in half, as if you were cutting a burger bun, then spread each slice with butter, then marmalade.Step 4
In a jug, whisk the milk, cream, eggs, sugar and all spice.Step 5
Layer the brioche in a square oven-proof dish (around 23cm) then scatter the fruit on top, pushing some between the layers.Step 6
Pour the milk mixture over the brioche and bake for 15 mins. Once cooked, remove and dust with icing sugar and toasted almonds. Serve with cream or ice cream.
