Ingredients

  • 150g Merchant Gourmet Whole Chestnuts, roughly chopped
  • 1 tbsp olive oil
  • 1 tbsp St Lawrence Gold Organic Pure Maple Syrup Dark
  • 1 tsp Bart’s medium curry powder, plus extra to garnish (optional)
  • ½ tsp fine sea salt
  • ¼ tsp freshly ground black pepper, to taste
  • 1 pinch flaky sea salt

Method

  • Step 1

    Tip the chopped chestnuts into a large bowl then drizzle with the oil and maple syrup. Sprinkle with curry powder, sea salt and plenty of black pepper then toss fully to coat.
  • Step 2

    Set a frying pan over a high heat.
  • Step 3

    Once hot, tip in the chestnuts and their marinad. Spread out in the pan and cook until crisp and browned all over, tossing as you go, about 4-6 mins.
  • Step 4

    Transfer to a serving dish, sprinkle over a little more curry powder, black pepper and flaky sea salt, then serve warm.
