
Crispy Roast Potatoes

These crispy roast potatoes will be your new go-to for your next roast dinner. They’re the ideal accompaniment to a vegan Christmas main course and pair well with our vegan gravy. Maris Piper potatoes give the most dependable crunchy-on-the-outside-fluffy-on-the-inside result, but you can use any floury potato variety you prefer.Time and servings

Ingredients
- 1.3 kg of floury potatoes, such as Maris Piper, peeled and quartered
- 2 pinches of coarse sea salt
- 1 tbsp of plain flour
- 6 tbsp of olive oil
Method
Step 1
Preheat the oven to 220°C/200°C fan/gas 7.Step 2
Add the potatoes to a large pan of cold, salted water. Bring to the boil with the lid on, then remove the lid, lower the heat to a simmer and cook for 15-20 mins, or until a cutlery knife can pierce the potatoes easily.Step 3
Drain the potatoes well, then return to the pan, put the lid on and give the pan a gentle shake to fluff up the potatoes inside.Step 4
Set the pan aside for 5 mins for the potatoes to steam dry. Add the flour, put the lid back on and shake the pan up and down gently a few more times.Step 5
Meanwhile, add the olive oil to a large roasting tin and place it in the oven until the oil is smoking hot. Remove from the oven and carefully add the potatoes one by one, turning each potato to coat it in the hot oil.Step 6
Season the potatoes with sea salt and return to the oven to roast for 1 hr 20 mins, turning them over halfway through the roasting time. They should be golden brown and extra crispy all over.Step 7
Serve hot.
