
Easy Smoked Salmon Seaweed Wraps

Give your lunchbox a boost with these healthy, bite-size wraps – without rice, they're easier to make than traditional sushi and low-carb, too. Each nori parcel is filled with smoked salmon, avocado, cucumber and red pepper for a nutritious snack. Pair them with a pot of edamame beans sprinkled with sea salt.Time and servings

Ingredients
- 80 g of smoked salmon, sliced into long strips
- 0.5 large avocado, sliced into long strips
- 10 cm of cucumber, sliced into long strips
- 0.5 red pepper, sliced into long strips
- 1 sheet of nori
- 3 tbsp of soy sauce, for dipping
Method
Step 1
First prepare the smoked salmon, avocado, cucumber and red pepper.Step 2
Halve 1 nori sheet and place the two halves shiny side down. On each one, lay half the sliced salmon, avocado, cucumber and red pepper in a strip along the edge of the shorter side.Step 3
Fold the edge of the nori over the filling, then roll it up firmly. Lightly wet the point where the nori overlaps itself to seal the roll. Repeat to make the other roll.Step 4
Using a dampened, sharp knife, cut each roll on the diagonal into two neat wraps. Serve with soy sauce for dipping.
