
Fruit and Nut Power Balls

These Fruit and Nut Power Balls couldn’t be easier to make, or pack up, when you’re on-the-go or in need of a mid-afternoon energy boost. Packed with nuts and seeds then naturally sweetened with apple, honey and dates you’ll love these and feel better for them! Add 1 tbsp protein powder with the nuts if you want to boost your macros even more.Time and servings

Ingredients
- 50g pistachios, chopped
- 50g chopped hazelnuts
- 25g toasted mixed seeds
- 1 tbsp desiccated coconut
- ½ tsp ground cinnamon
- 1 small apple (approx 120 g), grated
- 2 Medjool dates, chopped (approx 24 g)
- 1 tsp tahini
- 1 tsp runny honey
Method
Step 1
Heat the oven to 190°C/ 170°C fan/ gas 4 ½. Line a small baking tray with non-stick baking paper.Step 2
Tip the nuts, seeds, coconut and cinnamon into a mixing bowl.Step 3
Add the apple, dates, tahini and honey then mix until evenly combined - it will be slightly sticky.Step 4
Tip the mixture into the tray and press to an even layer. Gently mark 12 squares with a spatula and bake for 15 mins.Step 5
Remove from the oven and leave to cool until you are able to handle the mixture. Break into the 12 squares then roll each into a ball and leave to cool completely. Store in an airtight container for up to 4 days.
