
Green Bean Ballotins

Food writer Manon Lagrève wraps green beans in smoked streaky bacon for a salty, crispy twist on simple greens. Wrapping the beans into tasty bacon bundles also makes it super simple to serve up pre-portioned veggies. These are served as part of Manon’s ultimate French “Plat de resistance” Christmas meal, alongside medium rare Roast Sirloin of Beef, Mamie’s Farce, Pommes Duchesse and plenty of jus. Ingredients
- 1 vegetable stock cube
- 200g green beans
- 180g smoked streaky bacon
Method
Step 1
Bring a pan of water to the boil and crumble in the stock cube.Step 2
Tip in the beans and cook for 8 mins, drain and set aside until cool enough to handle.Step 3
Divide the beans into 6 portions then evenly wrap each portion with some bacon, using a cocktail stick to hold them together.Step 4
Set a frying pan over a medium-high heat and fry the bean bundles until the bacon is golden and cooked through.
