
Grilled Watermelon Salad

Ingredients
- 50 g of rocket
- 0.5 watermelon
- 60 ml of balsamic glaze
- 1 tbsp of extra virgin olive oil
- 100 g of goat's cheese, crumbled
Method
Step 1
Slice the watermelon into 3cm thick pieces. Place a non-stick griddle pan over a medium-high heat. Brush the watermelon with olive oil and place on the griddle pan for 2 minutes each side, or until char marks appear. Transfer to a plate and season with salt.Step 2
To serve, layer the slices over the rocket, crumbling the cheese on top. Season and drizzle with olive oil and balsamic glaze.
