
Little Spelt Pear Cakes

Perfect for picnics or a special teatime treat, these little pear cakes are quick to make. Spelt is light, with a lovely nutty taste that complements the delicate fresh pear. This simple recipe is easy enough for kids to follow – they'll love weighing ingredients and stirring the mixture.Time and servings

Ingredients
- 1 pear, quartered lengthways and cored
- 80 g of golden caster sugar
- 1 tsp of baking powder
- 120 ml of maple syrup
- 1 tsp of vanilla extract
- 200 g of butter, softened
- 3 large eggs, lightly whisked
- 200 g of white spelt flour
- 0.5 tsp of mixed spice
Method
Step 1
Preheat oven to 180°C/160°C fan/gas 4 and put 12 paper cases into a muffin tin.Step 2
Peel two quarters of the pear and chop into small dice, then thinly slice the other 2 quarters, widthways into small triangular slices. Keep separate and set aside.Step 3
Cream together the butter and sugar until fluffy, gradually add the eggs, then fold in the flour, baking powder and mixed spice. Add the maple syrup and vanilla extract and mix until well combined.Step 4
Fold through the diced pear.Step 5
Divide the mixture between the 12 paper cases, top each one with 2 slices of pear. Bake in the oven for 15-18 mins or until puffed, golden and cooked through.Step 6
Cool on a wire rack. Serve as they are, or for a little extra luxury add a spoonful of whipped cream, sweetened with icing sugar and blueberries or blackberries folded through.
